needing a recipe

recently i had a zucchini and yellow squash casserole. i really enjoyed it however i can not find a recipe for it i have searched through all my cookbooks even went on the internet on some recipe sites and could not find that. they had all kinds of recipes for either squash or zucchini but none for the casserole. if anyone has this recipe could you please pass it along to me i would love to have it. thank you.

One of my favorites!

6-8 squash and zucchini (equal parts of each)
medium sweet onion, cut down middle and then into slices so you have with strips
salt
pepper
8 oz. bag of shredded cheddar (you may or may not use the whole bag...I tend to)
1 cup sour cream (I use Daisy light)
1 can cream of chicken soup (I use Campbell's Healthy Request)
1/2 stick butter (melted)
1 8 oz. pkg. herbed stuffing mix (I use Pepperidge Farms)


Stew the squash, zucchini and onion until cooked tender. I usually fill a large pot with the squash mixture, add salt and pepper to taste, then just add about an inch or so of water to the pot, cover and stew.

Drain. Sometimes I mash it before adding to the rest of the ingredients, sometimes I don't.

While squash mixture cooks, mix 3/4 bag of stuffing with butter, soup, sour cream and about half the bag of cheese (or a little more if you like). Reserve remaining bag of stuffing and cheese for topping.

Add drained squash mixture to stuffing mixture and stir well. Taste to see if you need more salt/pepper and add to preference. Pour into a greased (I use Pam spray) casserole dish and smooth out the top. Place in 400 degree oven for 20 - 25 minutes, watching for the top to brown. Then sprinkle top with cheese and return to oven just until melted. Lastly, sprinkle with remaining stuffing crumbs and return to oven just until toasted/browned.
